肥肉多点炸出来好吃
不过还是看你喜欢哈
要是不爱吃肥肉的话    就瘦肉多一点
切成大小差不多的薄片或者薄长条     炸起来容易熟    肉块不要太厚大  


挂糊的话
生粉(淀粉)加鸡蛋   
我是一斤左右的肉    加俩鸡蛋     用了100克左右的生粉

不要加水调糊
加水入锅炸会炸锅

增加鲜味

6、放一点点白糖

7、加少许白胡椒粉

8、拌匀   腌制一会儿

9、再打入两个鸡蛋

10、拌匀蛋液

11、加入生粉(玉米淀粉)100克左右

注意因为不加水    拌的过程有点费力的
慢慢来    可以静置几分钟    让蛋液充分吸收生粉   再继续拌
生粉可以慢慢加进去  
鸡蛋可能大小有差异
生粉做适量增减
但是基本上就是这个量
生粉不能太少了

13、糊如下图 的程度哈
把肉用筷子隔开   碗底部的糊不会马上恢复

看着可能肉片表面有些地方没啥面糊糊的样子
没关系的 
下锅炸之后   表面是均匀的挂糊的
你之前拌的时候记得要多拌一会
